Scientific Research aboutCold Brew – Is It Healthier?

If you’re into cold brew coffee, you perhaps understand that the extraction science is different than the typical brewing methods. When it refers to brewing temperature,we are simply looking for “not hot.”

Cold brew is made by immersing medium-to-coarse ground coffee in water at room temperature or colder. Given that the preparation water is cold we need to steep for more than 12 hours. At the end of the saturating procedure we then strain the coffee grounds for a clear cup. In contrast to regular coffee, cold brew coffee is never exposed to temperatures over room temperatures.

Generally there is some confusion when comparing cold brew and iced coffee. Even though we serve both chilled, there is a great difference between them.

Iced coffee is any type of coffee drink that was chilled and is served with crushed ice. If you want to plan an iced coffee, you can use cold or hot brew, even espresso,if you prefer. The most important thing is to chill the coffee.

On the contrary, cold brew is a coffee that was never warmed during the course of brewing. This is what will make it unique and it offers its particular properties. We can have cold brew cooled with ice cubes.

The most common brewing technique is immersion cold brew that is utilized home and commercial preparation. This is the most basic technique and the most efficient.
Another method is Dutch cold brew, which is also called cold drip and involves dripping ice over coffee grounds, similarly to manual drip coffee techniques.

One point to consider is that cold brew at room temperature is somewhat different from the one steeped in the cold storage and this will produce a distinction in how much flavor you get in your coffee and how fast it will be ready. You have to adjust your steeping time appropriately (10-16 hours at room temperature; 16-24 hours refrigerated).

The extraction in cold water alters the composition of the cold brew coffee, and we get in turn a cup of joe that is a totally different beverage from your regular drip coffee,or espresso.
This specific difference became the topic of a very hot discussion around the health benefits of the cold brew coffee. Cold brew promoters claim it is better for you than the standard hot brewed coffee. Here is a list of the proposed benefits of cold brew coffee: it’s smoother ; smoother taste, low acid; better antioxidant; better caffeine kick; stomach-friendly compared to hot brewed coffee.

The heated conversation was moved into the research field where two researchers revealed the truth around the cold brew marketing promotion.

This is how Niny Rao and Megan Fuller scientists from University Thomas Jefferson, have started the job to shed some light on the subject matter. The research has revealed a few interesting facts which are presented in this announcement where one of the cited bloggers offers his view on the espresso vs cold brew coffee research.

“Coffee has a lot of antioxidants, and if you drink it in moderation, research shows it can be pretty good for you,” Megan Fuller,a Jefferson University chemist and study co-author,said in a university announcement. “We found the hot brew has more antioxidant capacity.”
